Grilled Potato Salad with Bacon and Scallions

Make ordinary potato salad extraordinary with a touch of smoke and heat from the grill.  

GRILLED POTATO SALAD WITH BACON AND SCALLIONS

Ingredients

3 lbs. red potatoes, cut into 3/4 inch cubes

3 green onions, root removed

1 tbsp. canola oil

1 tsp. Kosher salt

1/2 tsp ground black pepper

1/2 cup mayonnaise 

3 tbsp. dijon mustard

1 tbsp. red wine vinegar

1.5 tsp. smoked paprika

4 slices bacon, cooked and finely chopped

2 green onions, root end removed and thinly sliced

Instructions

Prepare grill for medium heat cooking, approximately 350 degrees.  Add 2-3 chunks of your favorite smoking wood to the charcoal and cover the grill.

In a medium mixing bowl, toss potatoes, oil, salt, and pepper.  Place potatoes in grill basket, set basket on the grill, and cover the grill.  Allow the potatoes to cook for approximately 30 minutes until soft, turning them every 5 minutes for even browning.

Grilling Potatoes

Remove potatoes from the grill.  In a medium mixing bowl, combine the mayonnaise, mustard, lemon juice, and smoked paprika.  Stir to combine then add in the grilled potatoes, chopped bacon, and sliced green onion.  Stir well then refrigerate until ready to serve.
