Grilled Crispy Smashed Potatoes

Looking for something different to serve up with your next grilled steak, pork chop, or chicken breast?  Well look no further than these crispy smashed potatoes!

GRILLED CRISPY SMASHED POTATOES

Ingredients

2 lbs. new red potatoes, scrubbed clean

1 tbsp. extra virgin olive oil

1 tsp. Kosher salt

2 tbsp. parsley, torn into small pieces

 

Additional Tools Required

1 grilling basket

1 sheet pan

Parchment paper

 

Instructions

Prepare grill for medium-high heat cooking (approximately 400 degrees).  Place potatoes in a grilling basket, cover the grill, and allow them to cook for approximately 30 minutes until fork tender, turning them periodically for even cooking.

Grill Potatoes Until Soft

Remove the potatoes from the grill.  Cover a sheet pan with a sheet of parchment paper and place the potatoes on the parchment paper.  Using a coffee mug or small pan, smash the potatoes to approximately ½ inch thick.  Drizzle olive oil over the potatoes and sprinkle with salt.

Smash Potatoes and Return to the Grill

Place the sheet pan on the grill, cover, and allow the smashed potatoes to roast for another 20-30 minutes until they are golden brown and crispy.

Remove the potatoes from the grill, plate and top with torn parsley then serve.
