Fire Eater Guacamole Burger

If you're a fan of extreme heat then you're going to love our recipe for the Fire Eater Guacamole Burger.  

FIRE EATER GUACAMOLE BURGER

Ingredients

1 tbsp. Kosher salt

1/2 tsp. ground black pepper

1/4 tsp. chipotle powder

1.5 lbs. ground beef (preferably an 80/20 blend)

1 cup Ms. Renfro's Habanero Salsa (or similar extra-hot salsa)

2 large jalapenos, sliced

8 slices Tillamook Hot Habanero Jack Cheese (or similar extra-hot cheese)

Fiery guacamole (recipe follows)

4 brioche buns, split

 

Instructions

Prepare grill for high heat cooking, approximately 450 degrees.  

Combine salt, pepper, and chipotle powder in a small bowl and blend well.  Form ground beef into four 6oz. patties and season both sides of the patties liberally with the seasoning mix.   Grill burgers for approximately 5 minutes per side until they reach an internal temperature of 140 degrees for medium, topping each one with 2 slices of hot habanero jack cheese during the last 2 minutes of cooking.  

Remove the burger patties from the grill.  Spread habanero salsa on the bottom half of each bun, top with 4-6 slices of jalapeños, and the burger patty.  Top the patties with guacamole, add the top bun, and serve immediately.

Fire Eater Guacamole Burger

FIERY GUACAMOLE

Ingredients

4 avocados, halved and seeds removed

1 lime, halved

2 Roma tomatoes, diced

1 jalapeno, finely minced

½ small red onion, diced

1 tbsp. finely chopped cilantro

Kosher salt and ground black pepper to taste

 

Instructions

Slice the avocados in half, remove the seeds, and scoop the flesh from the peel using a spoon.  In a small bowl, combine the avocado, juice from the limes, tomato, jalapeno, onion, and cilantro and mash with a fork to incorporate all of the ingredients.  Add salt and pepper to taste and serve immediately or refrigerate until ready to serve.
