Bacon makes everything better including grilled asparagus which, in my humble opinion, is already pretty darn great!
BACON WRAPPED GRILLED ASPARAGUS
2lbs. asparagus, trimmed
1 tbsp. olive oil + additional oil for drizzling
Kosher salt and ground black pepper
3-5 slices uncooked bacon, sliced lengthwise to create 2 long, thin strips
Prepare grill for indirect cooking, placing preheated briquets on one side of the charcoal grate and leaving the other side cool. Adjust the grill's bottom vents to bring the grill temperature to approximately 400 degrees. Toss asparagus with olive oil, salt and pepper, then wrap bunches of 6-8 stalks with 1 slice of halved bacon. Place bacon wrapped asparagus on the cool side of the grill, cover the grill, and allow them to cook for approximately 15 minutes* until the bacon is browned and beginning to crisp. Remove, plate, and drizzle with olive oil before serving.
* Note: If you want the asparagus to remain crisp, par cook the bacon slices for approximately 5 minutes until they begin to brown but are still limp.
