Chimichurri is a staple of Brazilian barbecue and this recipe works wonderfully as either a sauce or a marinade.
Chimichurri Marinade
½ cup roughly chopped parsley
4 cloves garlic, peeled
½ tbsp red pepper flakes
Half lemon, juiced
3 tbsp red wine vinegar
½ cup olive oil
Salt and pepper to taste
Add parsley, garlic, red pepper, lemon juice and vinegar to a food processor or blender and pulse to blend well. Slowly add in olive oil to create a smooth, vibrant green sauce, remove and chill until ready to use.
