In his latest cookbook Man Made Meals: The Essential Cookbook for Guys (Workman Publishing Co. 2015), Steven Raichlen is at his culinary best, providing guys with everything they need to step up their kitchen and grill game. Today, Steven is offering up one of the various sauce recipes featured in the book -- one that may only contain a few ingredients but will certainly take your barbecue over the top.
THREE-INGREDIENT BARBECUE SAUCE (CAROLINA MUSTARD SAUCE)
½ cup Dijon mustard
½ cup (packed) dark or light brown sugar
½ cup cider vinegar or rice vinegar
Coarse salt (kosher or sea) and freshly ground black pepper (optional)
Place the mustard, brown sugar, and vinegar in a heavy saucepan and gradually bring the mixture to a boil over medium heat. Let the sauce simmer until richly flavored, about 5 minutes, whisking often. Add salt and pepper to taste (if using). Cool the sauce, then transfer it to a bowl for serving or a clean jar, where it will keep in the refrigerator for several weeks.
Let the sauce return to room temperature before serving.
