Take ordinary potatoes and make them extraordinary with this recipe for sage smoked fingerling potatoes!
SAGE SMOKED FINGERLING POTATOES
2lbs. fingerling potatoes
1 tbsp. olive oil
½ tsp. kosher salt
½ tsp. dried rosemary
½ tsp. onion powder
½ tsp. garlic powder
1 cup sage leaves
1 vegetable grilling basket
Prepare grill for indirect cooking, placing preheated coals on one side of the bottom grill grate. Adjust bottom vents so that the grill temperature is approximately 300 degrees. Toss potatoes with olive oil, salt, dried rosemary, onion powder, and garlic powder. Wrap sage leaves in a single layer of aluminum foil and poke 4-6 holes in the foil. Place the sage pouch on top of the charcoal briquets. Add the seasoned potatoes to the vegetable grilling basket and place the basket on the cool side of the grill.
Cover the grill and allow the potatoes to smoke for approximately 45 minutes until fork tender.
Remove the potatoes from the grill and serve immediately.
