GRILLED VEAL CHOP WITH CHIMICHURRI BUTTER
4 tbsp. unsalted butter, softened
2 tbsp. chopped parsley
2 tsp. lemon juice
1 small garlic clove, finely minced
2 bone-in veal chops (approx. 12 oz ea.)
1 tbsp. canola oil
Ground black pepper
Prepare grill for medium-high heat grilling, approximately 425 degrees. In a small bowl, combine butter, parsley, lemon juice, and garlic and blend well. Set aside while you prepare the veal chops. Rub veal chops with oil then season well on both sides with Kosher salt and ground black pepper. Grill chops for approximately 8 minutes per side until they reach an internal temperature of 145 degrees. Remove veal chops from the grill and immediately top with chimichurri butter and serve.
